Beetroot Raita is very nutritious as beet has so many health benefits like it acts as a blood purifier which keeps your skin glowing and healthy. Beetroots are also rich in Vitamin C. So, this is the delicious and healthy way to have beetroot in your diet.

Instructions for how to make Beetroot Raita:
- Firstly, Heat a pan and add 1 tsp of oil to it then add mustard seeds to it.
- Add curry leaves (2-3 whole and 2 chopped leaves) to it.
- Add green chili to it. Saute them.
- Add grated beetroot to it.
- Add 2 tbsp of water to it and mix them well.
- Cover and cook it for 5-7 minutes.
- Add salt and red chili powder to it.
- Add dried mango powder to it.
- Whisk the curd to make a smooth silky consistency of curd.
- Add cooked beetroot to it.
- Mix it well. Beetroot raita is ready to serve.
- Transfer it to a serving bowl. Enjoy it with parantha or rice.
