As in this recipe, stuffed karela has been prepared without onion and garlic but you can serve it with fried onions, which impart their sweetness in this dish. Otherwise, you can serve it without onions. Bitter Gourd as the name suggests are bitter in taste and usually not liked by many people. Bitter gourd was often made in our house and even while growing up I would just love its taste and even now my kids also like it.

Instructions for how to make Bharwan Karela/ Stuffed Bitter gourd:

  1. Wash the bitter gourd and scrape its skin. Now cut the karela from the center leaving the bottom part. Remove the hard seeds with the help of knife.
  2.  After that take the bitter gourds in a deep plate/ bowl and then sprinkle 1/2 tsp of salt over them and rub them.
  3. Leave the bitter gourds for 20 minutes.
  4. Now, take the masala of punjabi Mango pickle in a small bowl. Add salt and turmeric powder to it.
  5. Add coriander powder and red chili powder to it.
  6. Add roasted cumin powder and garam masala to it.
  7. Mix them well. Achari stuffing is ready.
  8. Wash the karelas and squeeze all the water from it.
  9. Stuff the prepared stuffing into it.
  10.  Stuff all the bitter gourds with the masala equally. Press the masala well into the karela so it settles down.
  11. Heat 2tbsp of oil and add bitter gourd one by one.
  12. Cook slightly then cover the pan and cook the karela on a medium flame for 6-7 minutes. Open the lid, flip the karela, cover the pan again and cook it for another 5-6 minute.
  13. Open the lid and flip the side of the gourd from where it is not cooked. Keep on turning the sides till the karela is cooked from all the sides and corners till they are brown.
  14. Stuffed Bitter Gourd is ready to serve. You can serve it with fried onions also. Serve it with poori, parantha, chapati or naan.

Tips:

  • Do not make a deep cut, the bottom side should be joined so that it can be stuffed.
  • You can use any oil to fry bitter gourd but mustard oil enhances its taste.
