Vrat Wale Aloo is very simple, easy and quick fasting recipe. Boiled and cubed potatoes are sautéed with cumin seeds, peanuts, ginger and green chilies. As many spices and herbs are not allowed during fasting days. So here is the simple recipe of Vrat Ke Aloo fry, with step by step instructions and pictures.

Ingredients for Cumin Potatoes for fasting:
 6 Medium sized PotatoBoiled, Peeled and Cut into cubes
 1 tbsp Clarified Butter/ Ghee
 1 tsp Cumin Seeds
 2 Green ChiliFinely Chopped
 ½ inch GingerChopped
 2 tbsp Fresh Green Coriander/ CilantroFinely Chopped
 ¾ tsp or as per taste Sendha Namak/ Rock Salt
 ½ tsp Grounded Black Pepper
 1 tsp Coriander Powder
 1.50 tbsp Raw Peanuts
 ½ Lime/ Lemon

1. Firstly, heat 1 tbsp ghee or peanut oil in a pan/kadai. Since this is fasting food, I have used ghee/ clarified butter. You can also use peanut oil also for fasting. When not making for fasting you can use any oil. On a low flame, add 1 tsp cumin seeds/ Jeera and allow them to splutter.

2. Now add 1-2 tbsp raw peanut and roast them on low flame for 3-4 minutes or until they are roasted.

3. Then add finely chopped 2 green chilies and 1/2 inch chopped ginger. Sauté well. You can use grated ginger also.

4. Next add salt to taste, 1/2 tsp grounded black pepper and 1 tsp coriander powder to it. Use Sendha Namak/ rock salt for fasting recipes.

5. Now add 6-7 boiled potatoes, cut into cubes. Mix them well make sure cumin and spices will coat over them.

6. Add 2 tbsp finely chopped fresh green coriander to it. Mix and turn off the flame.

7. Then squeeze 1/2 lemon/lime over it and stir very well.

8. Jeera Aloo for fasting is ready to serve.
