Seviyan upma is a healthy breakfast recipe made with thin vermicelli and vegetables. Basically upma is the South-Indian cuisine but nowadays its commonly prepared breakfast recipe everywhere in India. This is a low-fat recipe and you can add as many veggies as you want, which becomes it more healthier.
Ingredients Preview
Firstly, Take a pan/ Kadai. Dry roast the vermicelli for 5 minutes.
Next, in a large vessel boil water and add the roasted vermicelli.
Add 1 tsp oil to it.
Then add salt and boil it for 3 minutes or until vermicelli turns soft.
Strain off all the water with the help of strainer and allow to cool completely.
Next, Take a pan/kadai and heat 2 tsp oil and add mustard seeds.
Then add curry leaves, green chili and peanuts and roast them till turn crunchy on low flame.
Add onions to the pan and saute till slightly translucent
Add all three colours of capsicum and saute for a minute. You can use only green capsicum also.
Then add carrots and peas. Saute all the veggies for a minute or two.
Further add salt, black pepper, coriander powder.
Then add turmeric powder and mix all the spices well.
Cover it with a lid and cook for 2-3 minutes or till vegetables turn soft.
Now its time to add cooked semiya/vermicelli in it.
Mix gently. Always remember do not over mix it as vermicelli will get mashed.
Add chopped coriander leaves.
Finally add lemon juice of one lemon in it. Mix them well.
Semiya/Vermicelli upma is ready to serve. Enjoy the healthy breakfast as it is full of vegetables.
