Veggie Cheese Wrap is a simple recipe for preparing fresh homemade soft crepes/ wrap sheets with the filling of vegetables and cheese. Veggie wraps are super healthy, easy to make and perfect for meal prepping. Here is the recipe with step by step instructions, pictures and tips.
1. Firstly, finely chop all the veggies(carrot, onion, capsicum, green onion, paneer, fresh coriander).
2. Heat 1 tbsp oil in a wok and sauté finely chopped 1/2 inch ginger and 2-3 garlic cloves.
3. After sautéing onion, add all the veggies and sauté them.
4. Add finely chopped Paneer and sauté for a minute.
5. Then add salt to taste, 1/2 tsp ground black pepper, 1 tsp chaat masala, 2 tbsp tomato ketchup and 1 tbsp red chili sauce to it.
6. Mix them well.
7. Add 2 boiled and mashed potato to it. Mix them well. Let it cool completely.
8. Then add 1/2 cup shredded mozzarella cheese to it and mix well. Set it aside.
9. Take 1 cup all purpose flour/ maida in a mixing bowl. Add 1/2 tsp sugar, 1/2 tsp salt and 2 tbsp oil to it.
10. Then add 4 tbsp plain yogurt/ curd and 1 cup milk @ room temperature.
11. Mix them well and prepare flowing consistency batter.
12. To prepare the wrap, heat a tawa on medium flame and grease it with oil and pour 2 ladleful batter on the tawa.
13. Spread in one direction and cook until upper layer is dry then grease it with oil.
14. Flip and cook on the other side.
15. Likewise, prepare all the sheets.
16. Take one wrap sheet upside down and set the veggies filling as shown in the picture.
17. Then fold it from all sides to make a pocket.
18. Heat 1 tsp butter on the tawa and roast the prepared veggies pocket.
19. Veggies Cheesy Wrap is ready to serve. Enjoy it hot with tomato sauce.
