This Vegetable Tomato Soup recipe is very easy and quick recipe to prepare soup. This vegetable soup is light, healthy and nutritious. The recipe is dairy-free, gluten-free, vegan, and is prepared without onion & garlic.It is an ideal meal starter or appetizer recipe which can be served before lunch or dinner. Here is the recipe with some tips and step by step instructions and pictures.
1. Firstly, add 4 roughly chopped tomatoes in a pressure cooker and switch on the flame.
2. Then add 1 peeled & chopped apple to it.
3. Next add 3-4 carrots and 1 bottle guard/ ghiya/ lauki roughly chopped to it.
4. Also add more vegetables like 1/4 beetroot, 7-8 French green beans or any vegetables of your choice.
5. Add salt to taste and 3-4 cups of water to it. Mix them well.
6. Make sure all veggies must covered with the water.
7. Pressure cook for 5 whistles on medium flame.
8. Let the pressure settle down on its own and then open the lid of the cooker. Vegetables has become soft and mushy. Let them cool completely.
9. Then transfer the cooked veggies to the blender/grinder jar.
10. Blend to a smooth puree.
11. Then sieve the puree and discard the residue. For extra fiber, don't sieve the puree. Then get the soup to a boil.
12. Vegetable Tomato Soup is ready to serve. Add crushed black pepper for more flavour & enjoy!
