Vegetable Poha is a yummy and healthy breakfast recipe of poha with the crunch of peanuts & vegetables. There are many variations of making poha, but this recipe is simple, quick and full of vegetables and not using much spices, makes this recipe more nutritious. Here is the recipe with step by step instructions, pictures and tips.

Ingredients for Vegetable Poha:
 2 cups Thick Flattened rice/ Poha
 2 tbsp Oil
 1 tsp Mustard Seeds
 Handful Roasted Peanuts
 ½ tsp Turmeric Powder
 ½ tsp Black Pepper
 Salt to taste
 ½ cup OnionChopped
 2 tbsp CarrotFinely Chopped/ Grated
 2 tbsp Green Bell Pepper/ CapsicumFinely Chopped
 1 tbsp Red Bell Pepper (Optional)Finely Chopped
 ¼ cup Green Peas
 ¼ cup Cottage Cheese/ PaneerSmall Cubes
 2 Green Chili
 2 tsp Fresh Coriander leavesChopped
 1 Lemon

2. Firstly, Heat 2 tbsp oil in a wok and add 1 tsp mustard seeds, let them splutter then add handful roasted peanuts.

3. Add chopped onion to it and cook till onion becomes translucent.

4. Add chopped/grated carrot and bell pepper to it. You can use any coloured bell pepper, I have used green and red bell pepper.

5. Add finely chopped green chilies and green peas to it. Saute for 2 mins.

6. Add 1/2 tsp turmeric powder, 1/2 tsp black pepper and salt to taste to it. You can add Red Chili Powder also. Mix all the spices well.

7. Add chopped fresh coriander leaves and paneer cubes to it. Mix them well & cook for 2 more mins.

8. Place poha in a sieve and add water into it to wash. To make perfect Poha don't soak it in the water, just wash it properly.

9. Then add washed poha to the wok. Mix all the veggies with poha well on low flame.

10. Switch off the flame and add lemon juice to it and mix it well.
