Mixed Vegetable Fritters/ Mix Veg Pakora is an easy, tasty and simple deep fried snack recipe, made with mixed veggies and gram flour. The pakoras have a crisp texture from outside and are soft from inside. It can be served with tea as a tea-time snacks or it can be served as a party starter/ appetizer for small parties and get togethers. These fritters tastes great with tamarind chutney/ sonth or green chutney or tomato sauce. Here is the recipe with some tips and step by step instructions & pictures.
1. Firstly, in a large bowl take 1 sliced onion, 1 small sliced potato, 100 g chopped cauliflower and 1 cup chopped spinach.
2. Then add 3 tbsp finely chopped green coriander, 1 tsp ginger paste, 1 finely chopped green chili, salt to taste, 1/2 tsp ground black pepper, 1/3 tsp carom seeds and 1/4 tsp turmeric powder.
3. Add 1 cup gram flour/ besan to it.
4. Mix well forming a moist mixture. Add water only if required, as veggies have enough water. I have used 1/4 cup of water.
5. In a medium hot oil, drop small ball sized mixture with hand or spoon.
6. Put as many pakoras in the pan/kadai as possible at a time.
7. Stir occasionally while frying on medium flame.
8. Fry the fritters till they turn golden brown.
9. Drain off over kitchen paper to remove excess oil. Likewise, prepare all pakoras. Sprinkle a little chaat masala over the pakoras. This makes the pakoras even more delicious.
10. The crunchy mix veg pakoras are ready to serve. Enjoy Mixed Vegetable Pakodas with tomato sauce, tamarind chutney or green mint coriander chutney.
