Veg Frankie/ Kathi Roll is a popular Indian street food. It is very famous in Mumbai. Nowadays, there are many variations in its stuffing. Here is the recipe with step by step instructions and pictures.

Ingredients:
For making dough:
 1 cup All purpose flour/ Maida
 ½ cup Wheat flour
 1 tsp Clarified butter (Ghee)
 ½ tsp Salt
For Frankie Masala:
 ½ tsp Kashmiri Red chili powder
 ½ tsp Turmeric powder
 1 tsp Coriander Powder
 ½ tsp Roasted cumin powder
 ½ tsp Garam Masala
 1 tbsp Chaat Masala
For Aloo Patties:
 4 PotatoesBoiled
 1 CarrotsJulienne cut
 1 OnionThinly sliced
 4 Green OnionThinly sliced
 4-5 Garlic clovesFinely chopped
 2 tsp Ginger paste
 Few fresh coriander leavesFinely chopped
 Salt to taste
 6 tsp Green chutney
 2 Green chiliFinely chopped
 1 tbsp White vinegar
 3 tsp Oil1 tsp for Aloo Patties and 2 tsp for roasting wraps.
 4 tsp Butter1 tsp for Aloo Patties and 3 tsp for roasting wraps.

Add all purpose flour and wheat flour to a mixing bowl.

Add ghee and salt to it.

Add water to make a soft dough.

Knead and stretch the dough.

Knead the dough well.

Cover it with a cloth/ plate for 1 hour.

After an hour, knead the dough for a minute.

Make dough in a cylindrical shape and divide into 6 equal parts.

Roll them and make balls.

Take one ball and dust some dry flour on the counter.

Roll it into 7-8 inches flat disc.

Heat the tawa on high flame and place the wrap on the tawa.

Slightly roast the wrap from both sides. Likewise, prepare all the wraps. Keep it aside.

For frankie masala, mix all the spices (Turmeric powder, red chili powder, coriander powder, cumin powder, garam masala and chat masala).

Add vinegar and chopped green chilies in a small bowl. Let it stand for half an hour before using it.

Add oil to a pan/wok.

Add chopped garlic and ginger paste to a pan.

Add 2 tbsp prepared frankie masala.

Add boiled and mashed potatoes to it.

Mix them well so that, the spices blend with potatoes.

Aloo mixture is ready for patties. Now allow it to cool for 5-10 mins.

Now, prepare cylindrical shaped patties.

In the same pan add 1 tsp oil and 1 tsp butter.

Roast patties from both the sides. Keep it aside.

Assemble Frankie Roll:

Heat a tawa on high flame then add 1/2 tsp oil and 1/2 tsp of butter.

Roast the wrap from both sides.

Place it in a plate. Spread 1 tsp of green chutney on the wrap. Add few carrot julienne and green onion slices on it.

Place aloo patties on top of it.
