This recipe of simple Tricolour Pasta is completely open ended and can be experimented with your choice of veggies and sauces. Like you can also add peas or broccoli for more green colour and carrots or tomatoes to give it more orangish colour and make the recipe more healthy by adding loads of veggies. For my daughter, after preparing tri colour pasta, I have set its layers by picking pasta of same colour with small tongs as Tiranga - Orange, white and green layers but this is totally optional. Instructions for how to make Tricolour Pasta:
- Firstly, in a large vessel boil enough water and add 1 cup tricolour spiral pasta to it.
- Then add 1/2 tsp salt and 1 tsp oil to it. Stir well and boil for 8-10 minutes or until pasta becomes soft/tender.
- Drain off the water once pasta turns al dente and keep it aside.
- Next, in a large pan/kadai heat 2 tsp oil and sauté 1 tbsp finely chopped garlic cloves. Then add 1 chopped onion to it and sauté till they turn soft.
- Then add red/orange and green chopped bell pepper to it.
- Add 1 tbsp tomato ketchup and 3 tbsp pasta sauce to it. Mix them well. If pasta sauce is not available then you can use tomato puree.
- Add 1/2 tsp ground black pepper, salt to taste and 1 tsp mixed herbs to it. Mix well and cook for a minute.
- Add in cooked pasta and mix gently till the sauce gets coated well.
- Pasta is ready and add grated cheese if you want.
- Finally, enjoy Tricolour Pasta hot garnished with cheese.

Tips:
- Boil the pasta till it turns soft and do not over cook as it turns sticky.
- Add vegetables of your choice like carrots, broccoli etc. to make it more healthy and nutritious.
- If pasta sauce is not available then you can use tomato puree and Indian spices if you want.
- Adding grated Mozzarella or Parmesan cheese is optional.
