Tomato Pulao is Mumbai street food style rice. It is tangy and spicy vegan tomato pulao recipe made with rice, tomatoes, mix vegetables and Pav Bhaji Masala. It is very easy to make and is extremely delicious and flavorful. It can be served as a meal with raita or plain yogurt. Here is the recipe with some tips and step by step instructions and pictures.

Ingredients for Street Style Tomato Rice:
 5 Tomato (medium-sized)3 tomatoes for Puree & 2 chopped
 3 cups RiceBoiled or Pre-cooked or Leftover
 1 Onion (large)Chopped
 ½ Green Bell Pepper/ CapsicumChopped
 1 CarrotChopped
 6 French BeansChopped
 ¼ cup Green Peas
 2 PotatoBoiled and cubed
 2 Green ChiliSlits
 1 tsp Ginger PasteGinger garlic paste can also be used.
 1.50 tbsp Oil
 1 tsp Cumin Seeds
 Salt to taste
 ¼ tsp Turmeric Powder/ Haldi
 1 tsp Red Chili Powder
 1.50 tsp Pav Bhaji Masala
 2 tbsp Green CorianderFinely Chopped
 ½ Lemon/ Lime
Directions for preparing Mumbai Mast Tomato Pulao with step by step Photos:

1. Firstly, take 3 medium-sized roughly chopped tomatoes in a grinder/blender jar.

2. And blend them to make tomato puree.

3. Now heat 1.5tbsp oil in a large pan/ kadai and splutter 1 tsp cumin seeds. Then add 1 chopped large onion to it and sauté till translucent.

4. Then add green chilies and ginger paste to it and sauté.

5. Next, add chopped veggies- 1/2 green bell pepper/capsicum, 1 carrot, 6-7 French beans and 1/4 cup green peas to it. Cook until the vegetables are slightly cooked, which ensures that the crispness of the vegetables is intact.

6. Now add the main ingredient- tomato, both chopped and puree.

7. Add all the spices- salt to taste, 1/4 tsp turmeric powder, 1 tsp red chili powder and 1.5 tsp pav bhaji masala to it.

8. Stir, and sauté till the tomato puree cooked well and leaves oil from the sides.

9. Then add 2 boiled and cubed potatoes to it and stir.

10. Cook for 2 more minutes so that potatoes also absorbs the flavours.

11. Next add 3 cups of boiled or pre-cooked or leftover rice to it. I have used boiled rice here.

12. Mix them gently and cook for 5 minutes on low flame and then turn-off the flame.

13. Finally, add 2tbsp finely chopped fresh coriander green and squeeze half lemon.

14. Stir and mix gently, make sure rice grains don't break.
