Banarasi Tomato Chaat or Banarasi Tamatar ki Chaat is the famous street food of holy city Banaras. This unique chaat recipe comes under North Indian Cuisine and prepared with the combination of pulpy mashed red tomatoes and roughly mashed boiled potatoes, with cumin flavoured sugar syrup. The highlight of this Banarasi Tamatar chaat is its final plating. Tomato-potato mixture is doused in sugar syrup of roasted jeera powder, lots of ghee, chaat masala, coriander leaves, and crushed namak para. This lip-smacking chaat is prepared without onion and garlic. This sweet, tangy and spicy chaat is very easy to prepare at home. Here is the recipe with some tips and step by step instructions and pictures.
1. Firstly, take 4 red tomatoes and finely chop them.
2. Then heat a pan/ kadai and add 2 tbsp clarified butter/ ghee in it. Splutter 1/2 tsp cumin seeds in hot ghee and then sauté 1 inch grated ginger and 2 finely chopped green chilies.
3. Next, add finely chopped tomatoes and 1/2 tsp or salt to taste to it. Saute for 2 minutes.
4. Boil for 3-4 minutes or until tomatoes soften slightly.
5. Then add 1/4 tsp turmeric powder, 1 tsp coriander powder, 1/2 tsp dried mango powder/ Amchur and 1 tsp red chili powder.
6. Sauté for a minute or two.
7. Then add 3 boiled and roughly mashed potatoes to it.
8. Mix them really well and add 1 cup of water to it.
9. Cover and cook for 5 minutes or until the ghee separates.
10. Then add few more spices- 1/4 tsp black salt, 1/2 tsp ground or crushed black pepper, 1 tsp cumin powder, 1/2 tsp garam masala, 1 tbsp tamarind chutney and 1 tsp chaat masala to it.
11. Now add 2 tbsp finely chopped fresh green coriander to it and mix them well.
12. Tomato base is ready for Banarasi Tamatar Chaat.
13. In a saucepan/ vessel take 1 cup water, 1/4 cup sugar, 1 tsp roasted cumin powder and 1/4 tsp black salt. Mix well and boil for 3-5 minutes or until the sticky sugar syrup is formed. Make sure no string sugar syrup is required. Just need sticky sugar water.
14. Transfer it to a bowl and Jeera sugar syrup is ready.
15. For serving, take prepared tomato base in a serving plate or bowl. Top it with 1 tsp ghee and 2 tbsp of prepared jeera sugar syrup.
16. Further top it with crushed Namakpare, Sev and coriander leaves. Then sprinkle a pinch of chaat masala and roasted cumin powder over it.
17. Banarsi Tamatar Aloo Chaat is ready to serve. Enjoy!
