Sweet Milk Dalia or Porridge of broken Wheat is a delicious and healthy Breakfast recipe. It is simply made by cooking cracked wheat with water and then milk, sugar and some dry fruits. Dalia is an excellent source of dietary fiber and this high fiber content in dalia gives you a feeling of fullness, so it is a complete breakfast meal. It is easily digested and very nutritious for kids, elders or people recovering from illness. Here is the recipe with some tips and step by step instructions and pictures.
1. Heat 1 tablespoon ghee in a large kadai/pan.
2. Add chopped almonds and cashew nuts and roast then for 2 minutes and then add raisins and roast for few seconds or till puff up. Take them out in a plate and keep aside.
3. In the remaining Ghee add 1/2 cup dalia/broken wheat. Mix it with the ghee and then begin to roast it in ghee.
4. Stir continuously and roast for 3-4 minutes on a low flame. The dalia will become aromatic and the color will change.
5. Add 1.5 cups water. Mix well and bring a boil and then lower down the flame to low.
6. Cook on low flame till the daliya absorbs water and dalia cooks around 80%.
7. Then add 2.5 cups of water to it. Mix well.
8. Let the mixture come to a boil on medium flame and stir in between.
9. Simmer for 8-9 minutes. Do stir so that the milk does not stick to the bottom of the cooker. The consistency of this sweet dalia is like rice kheer. Please note that on cooling the dalia thickens, so add milk according to the consistency you want. For a slightly thin sweet dalia, you can also add more milk.
10. Add 1/3 cup Sugar to it. I have used light brown sugar, regular sugar also goes well with this.
11. Add few Saffron strands or Kesar to it and mix well. Adding saffron is optional, you can also add 1/2 tsp green cardamom powder instead of Kesar. Now, Check the taste and add more sugar if required.
12. Next, add roasted dry fruits to it. Mix well.
13. Cook it for more 2-3 minutes.
14. Sweet Milk Dalia or Porridge is ready to serve. Garnish it with more chopped dry fruits and enjoy.
