Stuffed Mango Kulfi is a classical Indian ice cream dessert recipe made with fresh mangoes, which are stuffed with Malai Kulfi prepared with full cream milk, milk powder and malai. This recipe is an old- Delhi style Mango kulfi. Unlike the other traditional kulfi recipes, this kulfi has a unique taste of frozen mango with malai kulfi, which makes this kulfi more tasty and attractive. Here is the recipe with some tips and step by step instructions and pictures.
1. Firstly, take ripen mangoes (preferably Dasheri Mango) and wash them thoroughly.
2. Then cut from the top in such a way that you get the mango mould and cap for setting the kulfi, as shown in the picture.
3. Scrape the mango pulp carefully from the sides of the seed with the help of the knife. Then with the help of tong hold the seed and slightly twist it and pull it out. Do this step very carefully without damaging the mango.
4. Prepare all mangoes like this and mangoes are ready to be stuffed. Close the lid of mangoes and place them in a glass and set them in freezer.
5. Now let's prepare Malai kulfi, take 500ml milk in a thick-bottomed pan and turn on the flame.
6. Now in a small bowl take 2-3 tbsp milk from that 500ml milk and then add 2 tbsp milk powder and 1 tbsp fresh cream/ malai.
7. Mix them really well, make sure there are no lumps.
8. Add the prepared mixture in a lukewarm milk and mix.
9. Stir continuously and get the milk to a boil. Do stir and scrape often so that the milk does not get browned or burnt from the bottom as well as the sides.
10. Then add 3 tbsp of sugar and 1/2 tsp green cardamom powder. Mix them well.
11. Boil for at least 10 more minutes.
12. Stir and cook until the milk thickens. Milk is ready to prepare malai kulfi. You can also add chopped nuts in the milk at this point if you want.
13. Transfer the milk into a glass/bowl and refrigerate for 30 minutes.
14. After 30 minutes, take out the mangoes from the freezer and carefully open their lid.
15. Pour the kulfi mixture into the mangoes as shown in the picture.
16. Cover with the mango cap and freeze for at least 8 hours or overnight.
17. After 8 hours, the kulfi has set completely. Now carefully peel the skin of the mango as it is frozen and hard. Firstly peel the skin and then remove the mango cap. You might need kitchen towel or gloves to hold the mango, as it is so chilled.
18. Finally, cut into round pieces as shown in the picture.
19. Delicious frozen mango malai kulfi is ready to serve. Enjoy!
