Sago Fruit Dessert is very healthy and refreshing drink, prepared with milk, sabudana/sago, dry fruits and fresh fruits. Unlike the traditional fruit dessert or fruit custard, this Sabudana fruit dessert is served in more liquid form, as a drink, rather than dessert. It is very easy and simple to prepare at home without using any custard powder and rooh-afza. Here is the recipe with some tips and step by step instructions and pictures.

Ingredients for Sabudana Fruit Dessert/ Drink:

 ½ cup Sabudana/ Sago/ Tapioca PearlsSoaked
 1.50 cups Water
Ingredients for preparing milk:
 3 cups Milk
 2 tbsp Milk PowderOptional
  cup Sugar
 ½ tsp Green Cardamom Powder
Other Ingredients for Sago Fruit Drink:
 3 tbsp Dry fruits (Almonds & Cashew nuts)Chopped
 ½ cup MangoSmall Cubes
 3 tbsp Green GrapesHalved
 2 tbsp Black GrapesHalved
 4 StrawberriesChopped into small pieces
 1 Apple (Medium-sized)Chopped into small cubes

1. Firstly, rinse 1/2 cup sabudana or sago 2-3 times, then soak them in 1/2 inch water layer for 1 hour.

2. After 1 hour sabudana becomes bigger and soft, to check take 1 pearl in your first finger and thumb and press it with your thumb, if it has soaked properly then it is mashy, as shown in the picture.

3. Next, in a pot or kadai heat 1.5 cups of water and bring a boil and then add soaked sabudana to it.

4. Stir and boil for 10-12 minutes or until the sabudana turns translucent.

5. Drain off the sabudana once it is cooked completely then pour cold water over it to stop its cooking process and this also helps to rinse off excess starch and prevents from sticking.

6. Sago pearls are ready. Keep them aside.

7. Take a large pan/kadai and heat 3 cups of milk and 2 tbsp milk powder to it.

8. Stir continuously, make sure there are no lumps. Stir and boil until the milk reduces slightly.

9. Then add 1/3 cup sugar and 1/2 tsp cardamom powder to it. If you like more sweet then you can add upto 1/2 cup of sugar.

10. Mix them really well and boil for 5 minutes on low flame.

11. Transfer milk to a large mixing bowl and cool completely. It is advisable to refrigerate the milk as the chilled milk gives a nice taste.

12. For preparing Sabudana Fruit drink, add the prepared sago pearls to the prepared chilled milk.

13. Then add 2-3 tbsp chopped almonds and cashew nuts to it.

14. Finally, add chopped fruits of your choice. I have added chopped apple, green grapes, black grapes, strawberries, mangoes and 2 tbsp pomegranate seeds to it.

15. Mix them really well with the milk.

16. Pour the prepared Sago Fruit drink to the serving glasses.
