Rice kheer is one of the most popular sweet made in North Indian cuisine. It is a traditional Indian classic dessert recipe made with rice and milk. In North India, it has been prepared for any religious or festive occasions. Eating of rice kheer in the month of Sawan is considered to be auspicious. It is also famous in South India known as Rice Payasam. Both elders and kids like this delicious kheer. Here is the recipe with step by step instructions and pictures.
1. Ingredients Preview.
2. Clean and soak rice in water for 20 minutes.
3. Chopped all the dry fruits ( Almonds, cashew, pistachio and raisins) and then dry roast them for 2-3 minutes.
4. Heat a large vessel/wok , add 1 tbsp of water in it and then add 1 litre milk in it. Boil the milk.
5. Add in soaked rice and stir well.
6. Cook for 20 minutes or until the rice grains are cooked well. At this point add sugar to it and stir well.
7. Boil for 5 minutes or until the kheer turns creamy. Add saffron milk and cardamom powder to it and cook for 5 more minutes.
8. Add roasted dry fruits to it.
9. Mix them well.
10. Cover it and cook for more 10 minutes at low flame.
11. Open the lid. Creamy kheer is ready.
12. Garnish it with chopped pistachio and saffron strands. Enjoy it hot or chilled for a week when refrigerated.
