Rava kesari also known as kesari bath is a popular South Indian breakfast dessert made of semolina, ghee, saffron, nuts and sugar. Rava meaning semolina and kesari refers to saffron color. It is flavored with saffron and cardamom powder. Here is the Rava Kesari Recipe with step by step instructions, pictures and tips.
1. Firstly, heat 1/4 cup ghee/clarified butter in a heavy bottomed pan.
2. Then add 1/2 cup fine semolina/ sooji/ rava to it.
3. Roast rava on low flame.
4. Roast it for 10 minutes or till it turns aromatic and slightly changes the color of sooji .
5. Side by side, take 1/2 cup sugar in a bowl. (or 1/3 cup sugar if you like less sweetness).
6. Add 2 cups of water to it and few strands of saffron/ Kesar.
7. Mix it well until all the sugar dissolves.
8. Add sugar syrup to the roasted sooji.
9. Add 1/4 tsp green cardamom powder to it. Stir it.
10. Cover and cook on low flame until the rava absorbs water. Stir on intervals.
11. Make sure the mixture is combined well and no lumps are present.
12. Add chopped almonds and cashew nuts to it. Keep stirring.
13. Mix well till the rava kesari separates from pan.
14. Delicious and soft smooth Rava Kesari is ready to serve. Enjoy!
