Sprouted Moong Dal Dosa/ Pesarattu is a very healthy and easy Breakfast recipe of Andhra Pradesh. It is a crispy crepe prepared with whole moong dal. Pesarattu literally means Moong Dal Dosa. In Telugu, Pesara means green moong lentils or moong dal and Attu means dosa. It is very nutritious and vegan recipe. You can also prepare Pesarattu with whole moong dal also. Soak the whole moong dal for at-least 7-8 hours and rest of the steps are same. But sprouted moong dal dosa is more healthier. Here is the recipe with step by step instructions, pictures and tips.
1. Ingredients Preview.
2. Firstly, add 1 cup sprouted moong dal in a grinder jar and then add 2 green chilies & 1/2 inch piece of ginger to it.
3. Add little water, which helps to grind sprouts easily and 2 tbsp fresh green coriander leaves to it.
4. Grind to smooth batter.
5. Transfer the dosa batter to a large bowl and add 2 tbsp Rice flour. Rice flour has been added to get extra crispiness. Mix well.
6. Cover & keep it aside for 15-20 mins.
7. Take 1 finely chopped onion in a bowl and then add 1 grated carrot and 1/4th finely chopped capsicum to it.
8. After 20 mins, Add salt to taste. Mix the batter well and get to dosa batter consistency. Add water if required.
9. Heat a tawa/griddle and grease it with oil and then sprinkle some water and then wipe the tawa with kitchen towel/ napkin.
10. Pour a ladleful of the batter on a griddle and spread it in a circular motion thin circle.
11. Sprinkle 2 tsp veggies and 1 tsp oil over the moong dal dosa. Press gently, so that the veggies stick to dosa.
12. When it cooks it starts leaving the sides of the tawa.
13. Then fold it and transfer to a serving plate. If your dosa is not thin and didn't cook from the top, flip and cook from other side of dosa also.
14. Pesarattu/ Sprouted Moong Dal Dosa is ready serve. Enjoy hot dosa with Peanut Chutney or Kara Chutney.
