Paneer Jalfrezi is a tangy, easy and healthy stir fry recipe prepared with cottage cheese, capsicum, tomatoes, onion and few Indian spices. It is an easy and quick paneer recipe. It is basically an Indo Chinese cuisine curry recipe. It can be served with chapati, naan or paratha. Here is the recipe with some tips and step by step instructions and pictures.

Ingredients for Paneer Jalfrezi:
 200 g Paneer/ Cottage Cheese
 2 OnionThinly Sliced
 1 TomatoThinly Sliced
 ½ Capsicum/ Green Bell PepperThinly Sliced
 2 Green ChiliFinely Chopped
 1 tsp Ginger Paste or Grated GingerGinger garlic paste can also be used.
 2 tsp Oil
 ½ tsp Cumin Seeds
 Salt to taste
 1 tsp Coriander Powder
 ¼ tsp Red Chili Powder
 2 tbsp Tomato ketchup/sauce
 2 tsp Vinegar
 ¼ tsp Garam Masala
 2 tbsp Fresh Green Coriander/ CilantroFinely Chopped
 ½ tsp Kasuri MethiFor Garnishing

2. Firstly, heat 2 tsp oil in a pan or wok/kadai and splutter 1/2 tsp cumin seeds.

3. Then add two thinly sliced onion to it and sauté for 2 minutes.

4. Add 2 finely chopped green chilies and 1 tsp ginger paste/ grated ginger. You can also add ginger garlic paste or ginger julienne in place of ginger paste. Sauté them for a minute.

5. Next add 1/2 thinly sliced capsicum and continue to sauté for couple of minutes.

6. Then add 1 thinly sliced tomato to it.

7. Now, add salt to taste, 1/4 tsp red chili powder and 1 tsp coriander powder to it.

9. Next add 2 tbsp tomato sauce and 2 tsp white vinegar to it.

11. Add paneer pieces and give a gentle mix without breaking paneer. Cook it for 2 more minutes, so that paneer absorbs flavours and gets cooked well.

12. Finally, add finely chopped fresh green coriander leaves and 1/4 tsp garam masala to it.
