Palak Patta Chaat recipe is a delicious chaat recipe prepared with fried crispy spinach fritters topped with tangy sweet spicy chutneys, onion, boiled potato, sev and spices. It is perfect recipe for evening snack. Here is the recipe with some tips and step by step instructions and pictures.

Ingredients for Palak Pakora:
 15 Spinach Leaves
 1 cup Besan / Gram flour
 2 tbsp Rice flour
 ¼ tsp Turmeric powder
 ½ tsp Red Chili Powder
  tsp Carom Seeds/ Ajwain
  tsp or salt to taste
 ½ cup Water
Ingredients for preparing Curd:
 ¼ cup Curd/ plain yogurt
 2 tsp Powdered Sugar
 ¼ tsp Black Salt
Ingredients for Chaat:
 6 tsp Tamarind chutney
 6 tsp Green Chutney
 ¼ tsp Chaat Masala
 ¼ tsp Cumin Powder/ Bhuna Jeera PowderFreshly Roasted
 ¼ tsp Red Chili Powder
 1 OnionFinely Chopped
 ¼ cup Sev
 1 Boiled PotatoDiced
 ¼ cup Boiled Black ChanaOptional
 ¼ cup Pomegranate
 3 tbsp Besan Boondi
 3 tbsp Fresh Coriander LeavesChopped
Directions for preparing Palak Patta Chaat with step by step Photos:

1. Firstly, prepare curd for Spinach Chaat recipe. Take 1/4 cup thick curd in a bowl and whisk it and then add 2 tsp powdered sugar and 1/4 tsp Black salt to it. Mix well and keep it aside.

2. Now, in a bowl take 1 cup besan and 2 tbsp rice flour.

3. Then add 1/4 tsp turmeric powder, 1/2 tsp red chili powder, 1/3 tsp carom seeds/ Ajwain, and 1/3 tsp salt. Mix well.

4. Next, add 1/2 cup to 3/4 cup water and mix well. Quantity of water depends upon Besan you are using.

5. Mix to smooth and lump free thick batter with flowing consistency.

6. Take one spinach leaf. Dip the palak leaf into prepared besan batter and coat it completely.

7. Then deep fry it in medium hot oil.

8. Likewise, put as many spinach leaves as possible into the wok/Kadai.

9. Stir occasionally and fry on both sides until it turns golden and crisp.

10. Drain off the palak pakora to remove excess oil.

11. Arrange palak pakoda on the serving plate.

12. Then pour 1 tbsp curd, 1 tsp tamarind chutney and 1 tsp green chutney.

13. Place diced boiled potato on each leaf and then top it with boiled black chana and finely chopped onion over it. Then sprinkle a pinch of chaat masala, freshly roasted cumin powder and red chili powder.

14. Again top with 1 tbsp curd, 1 tsp tamarind chutney and 1 tsp green chutney. Furthermore, top with 2 tbsp sev and finally, garnish with chopped onion, chopped coriander leaves, boondi and pomegranate.
