Namkeen Masala Kaju/ Crispy Namakpare is the another variation of traditional namakpare with spices coated on it. It is a popular Punjabi deep fried snack. Serving it along with tea as a snack helps to increase its taste. Even kids like it very much as munchies/snacks. The packets of this kaju namkeen is usually found in bakery but you can easily prepare it at home with very few ingredients. Here is the recipe with all ingredients, tips and step by step instructions and pictures.
1. Ingredients Preview.
2. Firstly, Add Maida to a mixing bowl.
3. Add carom seeds (Ajavain) and salt to it.
4. Add 3 spoons of Ghee (Clarified Butter) to it and mix all the ingredients well. Make sure the flour binds together as shown in the photo. If not, then add 1/2 tsp more ghee to it.
5. Add warm water slowly to knead a tight dough. It requires 2-3 tbsp water.
6. Knead the dough for 6-7 minutes. Cover the dough and leave it for minimum 20 minutes.
7. After 20 mins. knead the dough again and make a smooth dough. Take the dough on a rolling board.
8. Roll it into 7-8 inches flat and thick disc. Check the thickness in the picture.
9. Take one lid of any medicine bottle or water bottle. Cut the shape of cashew by putting half lid on the dough as shown in the photo. First one is not in the proper shape but after that all are exactly like Kaju shape.
10. Cut the cashews in one line and then start cutting next line in a same way. Likewise, cut all the kaju matri.
11. Heat oil in a pan/wok and put the pieces one by one into the pan. Put as many pieces as you can in the pan at one time. Remember don't stir initially for 2-3 minutes.
12. After 3 minutes, Stir them occasionally and Fry the Kaju on medium flame until they turn golden brown in colour.
13. Take out the fried Kaju on a kitchen paper/napkin to absorb excess oil. Fry rest of namkeen Kaju in the same manner.
14. Now, let's prepare its masala. Add roasted cumin seeds powder and dried mango powder in a small mixing bowl.
15. Then add black salt and red chili powder to it.
16. Mix them well. Masala is prepared now.
17. Add fried Kaju matri in a mixing bowl.
18. Add prepared masala over it. Mix the masala on hot Kaju matri only, or else the spices will not coat on Kaju Matri.
19. Mix them well so that, all masala coated well on the Kaju.
20. Crispy Kaju Namakpare is ready to serve. Enjoy it with tea or coffee and store the remaining in an air-tight container.
