Motichur Laddu is an Indian Classic Sweet, traditionally prepared with tiny boondi made out of besan batter fried in ghee, then dipped in sugar syrup and formed to Ladoo. But today, I am going to share very easy recipe of Motichoor Ladoo, in which you don't have to fry boondi. It can be easily prepared with Boondi, which is available in the market and it tastes great, You just need to follow each instruction & trick carefully. These are prepared for any religious rituals or on any special occasions and festivals like Diwali, Ganesh Pujan etc. Everyone loves to eat mouth melting Ladoo. Here is the recipe with step by step instructions, pictures & tips.
1. Firstly, in a large thick bottomed pan/wok, take 230 gms of sugar.
2. Then add 110 ml water to it.
3. Dissolve the sugar and bring a boil.
4. Squeeze few drops of lemon in it. This step prevents from sugar crystallization.
5. Then add 1/4 tsp cardamom powder & few strands of saffron(Kesar) to it.
6. Add 3-4 drops or 1/3 tsp of yellow food colour to it and mix well.
7. Allow it to boil for 5 minutes or until syrup thickens slightly. Do not allow sugar syrup to attain string consistency.
8. Take 200 gms plain boondi in a sieve and rinse it in a tap water for 10-15 seconds. Don't soak it in the water. This step will remove the salt from boondi.
9. Take boondi in your hand & press it and check the boondi is still crispy.
10. Add Boondi to the hot sugar syrup.
11. Mix well and make sure to coat all the boondi with sugar syrup. Cover and keep it aside for at-least 1 hour.
12. After 1 hour, sugar syrup has been absorbed completely by boondi.
13. Add 1 tsp Desi Ghee to it and mix well.
14. Take 3 tbsp boondi in a grinder jar at a time. Grind it for 4 secs then stir it with spoon. Do it for 4-5 times or till it looks like very fine boondi as shown in the picture. Take it out in a bowl. The whole boondi will be done in 5-6 batches.
15. Now, add 2 tsp melted/ semi-melted Desi Ghee and 2 tbsp chopped cashews to it. Traditionally, melon seeds are added to it. But here I am adding chopped cashew nuts.
16. Mix them well. Boondi mixture is ready to make ladoo.
17. Take a small amount of boondi mixture in your hand and roll it to make a ladoo.
18. Likewise, prepare all Ladoos.
19. Tempting Motichoor Ladoo is ready to serve. Enjoy them immediately, or store them in a refrigerator for a week.
