Mix veg Raita is the another variation of Raita served with dry curries, pranthas, pulao and briyani. This cooling dip is basically made up with fresh curd and veggies like onion, tomato, cucumber and carrot etc. You can make it in different variations like onion tomato raita, tomato cucumber raita or add all the veggies in one raita called mix veg raita. Ingredients Preview.
Take a mixing bowl and add curd to it. Whisk the curd to make a smooth silky consistency of curd. You can use electronic mixer/blender or hand whisk to whisk it.
Add chopped onion and tomato in it.
Then add chopped cucumber and grated carrot in the bowl. You can add chopped green chili also.
Add roasted cumin powder to it.
Add salt or black salt and black pepper in it. I have added black salt.
Finally add chopped coriander leaves in the raita. Mix veg raita is ready to serve. Garnish it with roasted cumin powder and enjoy it with food.
