Meethi Seviyan or Dry Sweet Vermicelli is an Indian sweet dessert made with seviyan (whole wheat vermicelli), ghee, dry fruits and sugar. It is very simple, easy and quick recipe. It is healthy too, as it requires very less ghee to prepare. It can be prepared during festive season or it can be served as a dessert after meal. Here is the recipe with step by step instructions and pictures.
1. Firstly, heat a pan/ kadai and 2 tbsp Ghee/ Clarified Butter to it.
2. Once the ghee melts, then add chopped 5-6 cashew nuts and 8-10 almonds to it.
3. Roast them on low flame till they turn golden brown. Next add 1 tbsp raisins/ kishmish to it and roast for few seconds. Keep them aside.
4. In the same pan/ Kadai with remaining ghee add 1 cup Vermicelli/ seviyan.
5. Roast them on low flame, with frequent stirrings, until the semiya turns golden brown in colour. Keep the roasted Vermicelli aside.
6. In the same pan/ kadai add 1.5 cups of water and 2 green whole cardamom.
7. Bring the water to boil on medium to high flame.
8. Then add roasted Vermicelli, stir well and turn the flame to low.
9. Cover and cook for 8-10 minutes on low flame.
10. After 10 minutes, Seviyan has absorb all the water and semiya has cooked completely.
11. Now add roasted nuts and 1/2 cup sugar to it.
12. Mix well, till all the sugar dissolves. Turn off the flame.
13. And cover it with kitchen cloth and close the lid tightly for 10-15 minutes, so that seviyan absorbs all sugar water. Alternatively, cook them openly till it absorbs all the sugar water.
14. Delicious Sweet Vermicelli is ready to serve.
15. Enjoy Meethi Seviyan hot or warm or chilled!
