Mango Rice recipe is a South Indian dish, prepared for breakfast and lunchbox. Traditionally, it is prepared with lemon juice called Lemon Rice. It is very easy and quick recipe. It can be prepared with leftover rice also. Due to raw mango it has tangy flavour. Here is the recipe with step by step instructions and pictures.
1. Ingredients Preview.
2. Heat a pan/wok and add oil to it.
3. Add in dried red chilies, mustard seeds and a pinch of hing.
4. Add chana dal and urad dal to it. Allow to splutter.
5. Add curry leaves and peanuts to it.
6. Add raw mango to it .
7. Add turmeric powder and salt to it. Saute it for a minute.
8. Add fresh chopped coriander leaves to it.
9. Mix them well.
10. Add boiled rice to it.
11. Mix it gently without breaking rice grains. Cover and cook it on low flame for 2 minutes, so that, rice absorbs all the flavours.
12. Mango Rice is ready to serve. Enjoy it!
