Veg Manchurian Fried Rice is basically a fusion recipe, prepared with the combination of two Indo-Chinese recipes- fried rice and veg Manchurian. It is one of the popular Indian Street Recipe, which the people have as their lunch meal. So, it can be served as a lunch combo meal. This recipe is very easy to prepare at home. Here is the recipe with some tips and step by step instructions and pictures.

Ingredients for preparing Veg Manchurian Balls:
 1 cup CauliflowerGrated
 1 CarrotGrated
 ¼ Capsicum/ Green Bell Pepper
 2 tbsp Fresh Green CorianderFinely Chopped
 1 tsp Ginger garlic paste
 Salt to taste
 ¾ tsp Ground Black Pepper
 ¼ cup Corn Flour
 2 tbsp Plain flour/ Maida
 OilTo fry Manchurian balls.
Ingredients for Slurry:
 1 tsp Corn Flour
 ¼ cup Water
Ingredients for Manchurian Fried Rice:
 3 cups Cooked Rice
 1 tbsp Oil
 2 Garlic clovesFinely Chopped
 Few Ginger Julienne
 1 Green ChiliFinely Chopped
 1 OnionChopped
 2 tbsp Spring OnionFinely chopped
 1 CarrotJulienne
 ½ Green Bell Pepper/ CapsicumChopped
 ½ Red Bell PepperChopped
 2 tbsp Soy Sauce
 1 tsp Vinegar
 1 tbsp Red Chili Sauce
 2 tbsp Tomato Sauce
 ½ tsp or Salt to taste
 ¼ tsp Ground Black Pepper

Directions for preparing Vegetable Manchurian Balls:

1. Firstly, take 1 cup grated cauliflower, 1 grated carrot, 1/4 grated capsicum and 2 tbsp finely chopped green coriander in a large mixing bowl and combine well. In place of cauliflower, you can use finely chopped cabbage.

2. Then add 1 tsp ginger garlic paste, salt to taste, 3/4 tsp ground black pepper, 1/4 cup corn flour and 2 tbsp plain flour/ maida to it.

3. Combine well forming a soft dough. If the dough is loose, then add a tbsp of more maida and prepare a small ball sized ball. Likewise, prepare all balls.

4. Deep fry in hot oil keeping the flame on medium by gently place the balls in the hot oil.

5. When cooked from one side, turn the balls with a slotted spoon. Fry the balls till crisp and golden turning them over a couple of times.

6. Drain them once they have fried and stopped the ladle on the corner of the wok so that extra oil moves back in it.

7. In a large pan/wok heat 1 tbsp oil and add 2-3 finely chopped garlic cloves to it.

8. Then add some ginger julienne and 1 finely chopped green chili to it.

9. Add 1 finely chopped onion and 2 tbsp finely chopped spring onion and sauté for couple of minutes on medium flame.

10. Then add 1/2 green bell pepper/ capsicum, 1/2 red bell pepper and 1 carrot julienne. Stir fry on high flame without overcooking the vegetables.

11. Next, add 2 tbsp soy sauce, 1 tsp vinegar, 1 tbsp chili sauce and 2 tbsp tomato sauce to it.

12. Add salt to taste and 1/4 tsp ground black pepper to it. Stir fry until everything is well combined.

13. Then add ¼ cup corn flour slurry. To prepare corn flour slurry, mix 1 tsp corn flour in ¼ cup water.

14. Mix well and cook until the sauce turns glossy.

15. Now add prepared Manchurian balls to it, make sure the balls are well coated with sauce.

16. Add 3 cup cooked rice to it.

17. Stir fry without breaking the rice grains.
