Veg Manchow Soup recipe is an easy and simple Indo-Chinese recipe known for its hot and spicy taste. It is prepared with finely chopped veggies and some sauces, topped with fried noodles. It is a Vegan recipe. It is served as a starter/appetizer. Here is the recipe with step by step instructions and pictures.
1. Firstly take 1 cup boiled noodles in a bowl and then add 2 tsp corn flour to it. Mix gently to coat a thin layer of corn flour over the noodles.
2. Spread noodles uniformly in hot oil for deep frying.
3. Stir occasionally, keeping the flame on medium. Flip over and fry both sides until the noodles turn golden and crispy.
4. Drain off the crunchy noodles and keep them aside.
5. In a large pan/kadai heat 2 tsp oil. Sauté 1/2 inch grated ginger, 3 cloves garlic and 1 green chili.
6. Then sauté the white part of 4 finely chopped green onions.
7. After that add finely chopped 1/2 capsicum/ bell pepper, 4 mushrooms, 1 carrot to it. You can add veggies of your choice. Stir fry for a minute without overcooking them.
8. Then add 1/2 tsp salt, 1/2 tsp ground black pepper and 2 tsp sugar to it.
9. Add 1 tsp chili sauce and 2 tsp soy sauce to it.
10. Add 1 tbsp vinegar and 1/3 cup boiled noodles to it. Mix well.
11. Now, add 2 cups of coriander stem stock to it. For preparing stock boil 2.5 cups water in a vessel and then add 4 tbsp coriander stem and boil for 10 mins. Strain the water and use that water as a stock. You can use 2 cups of water also instead of stock.
12. Then add slurry to it. For preparing slurry, take 1 tbsp corn flour in a small bowl and then add 3 tbsp water to it. Make a lump free slurry by mixing it well.
13. Stir and boil until the soup thickens slightly. Garnish it with finely chopped green part of spring onions.
14. Finally, the Soup is ready. Enjoy hot veg Manchow Soup topped with fried noodles!
