Macaroni and cheese—also called mac and cheese is a popular dish in the United States, but nowadays it becomes popular all over the world. Basically, elbow macaroni cooked with cheese, most commonly cheddar cheese. It can also incorporate other ingredients, such as bell pepper juliennes, breadcrumbs etc. It is very easy to cook at home. Here is the recipe with some tips and step by step instructions and pictures.
1. Firstly, heat 2 tbsp butter in a large pan/kadai and then add 1 tbsp corn flour to it.
2. Roast the flour with butter for 3-4 minutes on low flame.
3. Then add 3 cups of milk to it and bring a boil. Milk should be at room temperature.
4. Then add 1.5 cups of macaroni to it and bring a boil.
5. Stir occasionally and cook until the macaroni is al dente or just cooked. It should not get too soft or mushy or break.
6. Then add capsicum julienne (green and red) and 1 tbsp sweet corn to it. This is totally optional.
7. Add salt as per taste, 1/2 tsp ground black pepper and dried basil leaves to it.
8. Cook it a minute or two and turn off the flame.
9. Then add 1 cup Cheddar cheese to it and mix it well. Make sure do not overcook the cheese. Mac and cheese is ready at this step. It can be served hot but for slightly crispier flavour follow the next steps.
10. Take oven-safe serving bowl and transfer the cooked Mac and cheese to it.
11. Top it with cheddar cheese, bread crumbs and sprinkle some mixed herbs. It is ready to bake.
12. Place it in the pre-heated oven at 350°F for 10 minutes.
13. Delicious cheesy Mac and Cheese is ready to serve. Enjoy!
