Lobia/black-eyed bean is very nutritious. It is rich in protein and much more nutritious for growing kids. It is very simple recipe and served with chapati/roti or rice. For authentic Punjabi style you can add cashew paste or fresh cream/malai to the curry. But I have prepared it in a simple way. Clean and wash lobia and soak it in water for 3 hours.

It grows bigger after soaking.

Now lets prepare its masala by adding oil and cumin seeds in a pressure cooker.

Now add finely chopped onion to it. Cook it till golden brown.

Add freshly prepare tomato puree to it. (Grind finely: tomato, green chili and ginger)

Add salt to it and fry it till the tomatoes become soft and the mixture appears granulated.

Add Coriander powder to it.

Add turmeric powder and red chili powder to it and mix them well.

Add soaked lobia to it.

Add 2-3 cups of water to it and pressure cook for 2 whistles then let the mixture to boil for another 10-15 minutes, on low flame or until lobia is cooked completely.

Open the cooker after it's pressure has released and add garam masala to it.

Lobia curry is ready to serve. Garnish it with fresh coriander leaves and enjoy it with chapati or rice.
