These healthy lettuce wraps are filled with tasty combination of sauces, cottage cheese/ paneer, and crispy-crunchy vegetables and noodles. These wraps has been prepared in Indo-Chinese flavour with a delicious stir-fry fresh vegetables with sauces and that served in a cold and crisp lettuce leaf. These can be served as an appetizer or salad or as a meal for lunch /dinner. Here is the recipe with some tips and step by step instructions and pictures.
1. Firstly take 1 cup boiled noodles in a bowl and then add 2 tsp corn flour to it.
2. Mix gently to coat a thin layer of corn flour over the noodles.
3. Spread noodles uniformly in hot oil for deep frying. Stir occasionally, keeping the flame on medium. Flip over and fry both sides until the noodles turn golden and crispy.
4. Drain off the crunchy noodles and keep them aside.
5. In a pan/kadai heat 2 tsp oil and sauté 1tbsp finely chopped garlic.
6. Then add 1 finely chopped onion and 1 tsp grated ginger to it. Sauté them till onion turns translucent.
7. Now add 1/2 cup finely chopped red and yellow coloured bell pepper or capsicum to it and sauté.
8. Add 1/2 cup finely chopped carrot and 1/2 cup sweet corn to and sauté for couple of minutes.
9. Next add salt to taste, 1/2 tsp grounded black pepper, 1tbsp red chili sauce, 1tbsp tomato ketchup, 1 tsp soy sauce and 1 tsp white vinegar to it. Mix all the spices and sauces well and sauté them for 1-2 minutes on high flame.
10. Add 1 cup small cubed Paneer to it and cook for 2-3 minutes.
11. Add spring onion greens and mix well. Veggies mixture is ready.
12. Take one cleaned and separated romaine lettuce leaf and add a spoonful of prepared veggies mixture at the center of it. Trim the leaf if you want, I have taken the leaves as it is. You can use any lettuce to prepare lettuce wraps like iceberg, green leaf etc.
13. Also add some fried noodles to it.
14. Then wrap them by folding both the ends and join them with the help of toothpick. Likewise prepare all wraps.
15. Lettuce Wraps are ready to serve. Enjoy yummy and healthy lettuce wraps as a salad or snack.
