Lemon Rice is one of the most popular and commonly made rice recipe comes under South Indian cuisine, prepared with boiled rice, a mixture of mustard seeds, urad dal, chilies, herbs, spices, peanuts and lemon juice. It can be prepared with freshly cooked rice or leftover rice. This rice recipe is very easy and simple to prepare. Here is the recipe with some tips and step by step instructions and pictures.

Ingredients for Lemon Rice:
 2 cups Cooked Rice
 1 tbsp Oil
 2 Dried Red Chili
 1 tsp Mustard seeds
 1 tsp Ginger Paste or grated 1/2 inch ginger
 1 tbsp Chana Dal/ Bengal split gram
 1 tsp Urad Dal/ Urad Gota
 Few curry leaves
 2 tbsp Roasted Peanuts
 2 tbsp Fresh green coriander/ CilantroFinely Chopped
 Salt to taste
 ¼ tsp Turmeric Powder
 1 tbsp Lemon Juice/ Lime JuiceFor more tangy flavour add 1.5 tbsp lemon juice

2. Firstly, heat 1 tbsp oil in a pan/ kadai and add 2 dried red chilies. Then add 1 tsp mustard seeds and let them splutter.

3. Next add 1 tbsp chana dal and 1 tsp urad dal to it. Roast them on low flame for 3-4 minutes.

4. Then add few curry leaves and 1 tsp ginger paste to it. Roast them on low flame for 2 more minutes.

5. Add 2 tbsp roasted peanuts to it.

6. Now add salt to taste, 1/4 tsp turmeric powder and 2 tbsp finely chopped green coriander to it and sauté.

7. Then add 2 cups of cooked rice to it and mix gently, making sure everything is combined well. Turn-off the flame.
