Lauki Ice-cream recipe is very easy as well as healthy recipe. It has been prepared with very less ingredients- milk, lauki and sugar. There is no need of cream, condensed milk or milk powder in this recipe. Even then this lauki kulfi is creamy and tasty. Adding cardamom powder and green food colour is optional but they enhances its flavour and colour. It tastes much like pista badaam kulfi ,which we buy from the market. Here is the recipe with step by step instructions, pictures and all tips.
1. Ingredients Preview.
2. Heat milk in a heavy based utensil and boil it. Add 1 tbsp water before adding milk.
3. Now, add grated Lauki to it.
4. Cook it till bottle gourd becomes soft.
5. Add cardamom powder and sugar to it.
6. Add green food colour to it, which gives light greenish to the ice-cream. However, this is an optional step.
7. Boil till it decreases in quantity while stirring continuously.
8. Turn off the flame and cool it completely. Transfer the mixture in blender jar.
9. Blend it to a smooth creamy mixture.
10. Transfer the mixture to an air-tight container.
11. Cover it foil paper/ cling wrap and then close its lid. Keep the container for 2 hours in the freezer.
12. After 2 hours, take out the container from the freezer and transfer the frozen ice-cream to the blender jar.
13. Again blend the frozen ice cream properly.
14. Add chopped almonds and pistachio to the mixture and mix them well with the help of spoon.
15. Transfer the mixture to an air tight container or Popsicle mould. You can transfer the entire mixture in a container also. But if you want Kulfi then use Kulfi mould or Popsicle mould. Garnish ice-cream with chopped dry-fruits.
16. Cover the container/ mould with foil paper and set the sticks for popsicles. Then again freeze it for 6-7 hours or overnight.
17. After 7 hours, Lauki Ice-cream is frozen and ready.
18. De-mold it.
19. Enjoy refreshing Lauki Kulfi/ Ice-cream.
