Khajur Dry Fruits Barfi is a healthy, simple, easy and tasty burfi recipe, prepared without any sugar. It is a vegan recipe. It is a North Indian sweet recipe, which is an ideal recipe to prepare during festivals like Raksha Bandhan, Diwali, Holi etc. and even for fasting days like Navratri, Shivratri ,or Janamashtami fast etc. Here is the recipe with some tips and step by step instructions and pictures.
1. Firstly, take 2 cups of seedless dates/ Khajur and finely chop them or blend them to coarse paste without adding any water in blender. Keep the chopped dates aside.
2. Next, heat a large pan and dry roast 2 tbsp poppy seeds and keep it aside.
3. Then in the same pan dry roast 1/2 cup chopped almonds, 1/2 cup chopped cashew nuts and 1/2 cup chopped walnuts.
4. Roast them on low flame for 5 minutes or till the nuts turn crunchy.
5. Keep the roasted nuts aside too.
6. Now, heat 2 tbsp ghee in a pan and add roasted poppy seeds to it.
7. Then add finely chopped dates/ khajoor to it.
8. Mash the dates slightly with potato masher. This is optional but it smoothens the khajur.
9. Add the roasted nuts, 1/2 tsp green cardamom powder and 1/2 grated nutmeg to it.
10. Then add 1/4 cup desiccated coconut to it and mix them well with mashed dates.
11. Continue to fry on low flame smashing dates with a spatula. This helps dates to separate out and mix uniformly with other dry fruits.
12. Turn off the flame and transfer the mixture in a plate so that it cools down quickly.
13. Roll the mixture into a long log with your hands and wrap the log with aluminum foil and refrigerate for 2 hours. Alternatively, you can pinch little mixture and roll them to make Dates Laddu.
14. Then unwrap the log and cut it into 1/2 cm thick burfi chunks.
15. Sugar free Khajur dry fruits barfi is ready to serve. Enjoy Dates dry fruits roll immediately or store them in airtight container for a month.
