Katlambe is a traditional breakfast recipe. Katlama or Katlambe is a crispy, flaky deep fried flat bread, prepared with refined flour/ maida with layers of ghee rolled into it. Basically, Katlambe has its origin in Peshawar but its one of the most popular street food of Dehradun, where it is served with Chole. Here is the recipe with some tips and step by step pictures and instructions.
1. Firstly, take 2 cups of plain flour/ maida in a large mixing bowl.
2. Then add 1/2 tsp of salt and 2 tsp of oil to the maida and mix really well with your hands.
3. After that pour water gradually into the flour and knead a soft dough.
4. When the dough is ready, apply a little oil to your hand and knead the dough for 3-4 minutes. Cover and rest the dough for 20 minutes to set.
5. After 20 minutes, knead the dough again after applying oil to your hands and prepare a smooth dough.
6. Divide the dough into 2 equal portions.
7. Then take 1 portion and divide it into 7 equal parts and cover them.
8. Pick one part and make it round like Peda. Dust the wheat flour and roll it into a thin sheet of 5-6 inches in diameter.
9. Similarly, roll out remaining 6 sheets also.
10. Take a rolled sheet and apply ghee to it. Sprinkle wheat flour and spread it all over the sheet.
11. Place or stick another sheet over this one and do the same with it till you get 6 layers.
12. Dust the prepared sheet with flour as we have to roll it into a big sheet with the thickness as shown in the picture.
13. Cut strips from the rolled sheet and brush ghee, and sprinkle wheat flour and carom seeds all over them.
14. Roll the strips one by one, add carom seeds at the top and press it to give a peda-like shape. Repeat steps from 7-14 with the second portion of dough.
15. Likewise, prepare all the Pedas. Keep them covered in a bowl.
16. Take one prepared peda on a rolling board and roll it into a thin sheet with the help of rolling pin.
17. Check the oil temperature, a little more than medium hot oil is required for frying Katlama. The flame would be medium too. Gently Slide the rolled sheet in the oil.
18. Press it down with a spatula as soon as it comes up to the surface.
19. Fry Katlama till golden brown from both sides. Each Katlama will take 2-3 minutes to fry.
20. Super delicious Katlambe are ready to serve. Enjoy them hot with chole, aloo curry, chutney, or pickle.
