Kaju Corn Mithai is very easy and simple to prepare. It is nothing but Kaju Katli in the shape of corn. Kaju Katli is a popular Indian sweet, prepared with cashew powder and sugar syrup. But in this recipe I have used condensed milk which makes it's recipe more easy. So, no need to prepare sugar syrup (Chashni). It is very costly sweet in big sweet shops but you can easily prepare it at home with some tips. This recipe is perfect to prepare during Indian festivals like Diwali, Navaratri, Raksha Bandhan and Ganesh Chathurti. As this is kid's all time favourite sweet recipe, you don't need any occasion to prepare this. Here is the recipe with step by step instructions, pictures and tips.
1. Ingredients Preview.
2. Firstly, heat a pan and add 2 tsp Ghee to it. Then add condensed milk to it.
3. Bring a boil to condensed milk.
4. Then add milk powder and Kaju/ Cashew Powder to it.
5. Mix them well continuously till it starts releasing from pan and it turns to dough .
6. Switch off the flame and transfer the cashew dough on to the cling wrap/ butter paper.
7. Divide the dough into two portions of ratio 1:3.
8. In the bigger portion (3/4th part of dough) add yellow food colour and in the smaller portion (1/4th part of dough) add green food colour.
9. Mix them well with greased hands and make a smooth dough.
10. Take a small lemon sized dough from yellow coloured dough and roll in your hands to give it a shape of corn.
11. Likewise, prepare all corns with yellow dough.
12. Now, take a very small portion from green dough, roll in your hands and then gently press it with your finger to give it leaf shape.
13. For 1 corn take 3 green leaves and join them from bottom as shown in the picture. Likewise, prepare all leaves.
14. Join the corn with the leaves from the bottom and it is done. Likewise, prepare all the corns.
15. Kaju Corn Mithai is ready to serve. Enjoy!
