Kadai Paneer Recipe is an authentic recipe of Paneer (Cottage cheese) and freshly grounded Kadai Masala made with whole spices. The freshly prepared Kadai Masala adds a unique flavour and taste to the curry compared to the other Paneer curries. It is one of the most popular recipe of Punjabi Cuisine. This Dhaba Style Kadai Paneer Recipe is a semi dry, mildly spiced curry and easy to prepare at home. It is a delicious curry served with Chapati, Parantha or Naan. Here is the recipe with step by step instructions & pictures.
1. Firstly, dry roast 2 tsp coriander seeds, 1 tsp cumin seeds and 3 dried red chilies till they turn aromatic.
2. Allow to cool them and then coarsely grind them in a grinder. Keep it aside.

2. Heat 1.5 tbsp butter in a kadai/pan and sauté 1 bay leaf.
3. Add 1 tbsp freshly prepared Kadai Masala & sauté for a minute on low flame.
4. Add finely chopped onion and ginger paste to it. Fry till onion turns golden brown.
5. Add 1/4tsp Turmeric powder and 1/2 tsp Red Chili Powder to it.
6. Add tomato puree & salt to it. To prepare tomato puree, blend 2-3 tomatoes & 2 green chilies in a blender jar. Cook till it starts to release oil.
7. Add 1 tsp of prepared Kadai Paneer again and 1 tsp coriander powder to it.
8. Add 1 cubed tomato and 1 onion petals to it.
9. Add 1/2 cubed capsicum & few ginger julienne to it.
10. Mix them well and cook for 2-3 mins. make sure they should be crunchy.
11. Add paneer cubes and 2 tbsp water to it. Mix gently make sure the paneer doesn't break.
12. Cover and cook for 5 minutes or till paneer absorbs all the flavours, on low flame.
13. Finally, add 1/2 tsp garam masala and 1 tsp crushed kasuri methi to it.
14. Kadhai Paneer is ready to serve. Enjoy it with Chapati, Parantha or Naan.
