Rava Vegetable Idli is light, soft, spongy, tasty and healthy breakfast recipe, which is easily digestible and takes less time to prepare. It is a pillowy soft steamed savory cake made from rava or sooji. It is a variation of the traditional South Indian Idli which is made with fermented rice and lentil batter and more popular in Urban areas as it is a complete breakfast meal and prepares quickly. Adding finely chopped vegetables, makes it more nutritious. Here is the recipe with some tips and step by step instructions and pictures.
1. Firstly, take 1 cup Rava/ Sooji/ Semolina in a large bowl.
2. Then add 1 cup curd to it.
3. Mix them well with the help of whisk. Gradually, add 3/4 cup water to it.
4. Mix well forming a smooth batter. Cover and rest for 20 minutes or until the rava absorbs water.
5. Now, heat 2 tsp oil in a pan and splutter 1 tsp mustard seeds.
6. Then add a pinch of heeng and few curry leaves to it.
7. Add 1 tbsp chopped cashew nuts and 1/2 tsp red chili powder to it.
8. Sauté until golden brown. Tempering for Idli is ready.
9. After 20 minutes, add 1 finely chopped carrot, 1/2 finely chopped capsicum, 2 tbsp finely chopped fresh coriander leaves and then add 1 tbsp chopped roasted peanuts. Mix well in the batter.
10. Pour the tempering over idli batter.
11. Mix very well and add water only if required, to form an idli batter consistency batter.
12. Just before steaming add 1/3 tsp baking soda and salt to taste. Alternatively, add 1/2 tsp of eno (fruit salt) in place of baking soda.
13. Mix well till it turns frothy.
14. Pour the batter immediately into the idli plate. Do not rest the batter.
15. Likewise, fill all the plates.
16. Steam the vegetable idli for 4-5 minutes in a microwave. If you are using stove-top idli stand then steam for 15 minutes on medium flame.
17. After 4 minutes and 30 seconds, Idli are ready.
18. Enjoy instant Vegetable Rava Idli as a healthy breakfast with Peanut chutney or Kara Chutney.
