Idli Dhokla is a fusion recipe, prepared with the combination of South Indian Cuisine recipe with the popular variant from Gujurati Cuisine, as it has the shape and texture of Idli and prepared with besan (flavoured with Khaman Dhokla). It can be served for Breakfast or as a snack. It is very easy, healthy and quick recipe, prepared in 5 minutes in the microwave. Here is the recipe with some tips and step by step instructions and pictures.

Ingredients for Instant Idli Dhokla:
 1 cup Gram Flour/ Besan
 ½ cup Semolina/ Rava/ Sooji
 ¾ cup Curd/ Plain yogurt
 1 tsp Ginger Paste
 2 tsp Lemon Juice
 1 tbsp Sugar
 ¼ tsp Turmeric Powder
 ¾ tsp or Salt to taste
 ¾ tsp Eno fruit salt
 ½ cup Wateror as required
 Oil for greasing the Idli plates
Ingredients for tempering:
 2 tsp Oil
 ½ tsp Mustard Seeds
 12 Curry Leaves
 2 tbsp Fresh CoconutGrated
 1 tbsp Fresh Coriander LeavesFinely Chopped
 ¼ tsp or Salt to taste
 1 tsp Sugar
 ½ cup Water
Directions for preparing Idli Dhokla with step by step Photos:

1. Firstly, take 1 cup gram flour/ besan and 1/2 cup of semolina/ sooji in a large mixing bowl.

2. Then add 3/4 cup curd to it and start mixing it.

3. Next add 1/2 cup of water in small portions to make a thick and dense lump free batter.

4. Then add 1 tsp ginger paste, 3/4 tsp salt, 1/4 tsp turmeric powder and 1 tbsp sugar to it and mix them really well.

5. Lump free smooth batter is ready. Cover and set it aside for 10 minutes. Meanwhile grease the idli stand.

6. Now, add 2 tsp lemon juice and mix well.

7. Next add 3/4 tsp Eno fruit salt and mix gently until the mixture turns frothy. Make sure do not stir for longer time.

8. Now immediately pour the batter into greased idli plate.

9. Place the idli stand in microwave for 4.5-5 minutes. If you are using gas stove idli stand then steam it for 12-15 minutes. I have prepared in two batches that's why the cooking time is 10 minutes.

10. To check, insert a knife inside the idli, it should come out clean. Then separate out the dhokla from idli moulds using a knife.

11. Now, let's prepare its tempering, heat 2 tsp oil in a pan and splutter 1/2 tsp mustard seeds and 12-15 curry leaves.

12. Then add 1/2 cup of water, 1/4 tsp or salt to taste, and 1 tsp sugar to it. Mix them well.

13. Bring a boil and the tempering is ready.

14. Pour the tempering over the idli, make sure the water is absorbed by idli.

15. Garnish it with 2 tbsp fresh grated coconut and 1 tbsp finely chopped fresh coriander.

16. Palatable Idli Dhokla in microwave is ready to serve. Enjoy it with tomato sauce or green chutney!
