Hara Bhara Kabab is a healthy starter recipe in North Indian cuisine, which are basically pan-fried spiced patties/ tikkis made with mix of some green vegetables - spinach, green peas, capsicum and French beans with cottage cheese/ paneer and potatoes. It is delicious as well as nutritious recipe have the goodness of green vegetables as its name suggests. It can be served with any chutney or even tastes great with tomato ketchup only. Here is the recipe with some tips and step by step instructions and pictures.
1. Firstly, blanch spinach. Boil water in a vessel and then switch of the flame and add 1 cup of spinach to it for 2 minutes.
2. Take out the spinach in a sieve, then pour chilled water over it. Then keep it aside to drain off excessive water.
3. Next, heat 2 tsp oil in a pan/kadai and then splutter 1/2 tsp cumin seeds. Further add 1 finely chopped green chili to it.
4. Then add 1 chopped capsicum and 3/4 cup chopped beans to it. Sauté them.
5. Next, add 1/2 tsp ginger paste,1/2 cup peas and salt to taste to it.
6. Cover and cook for 5 mins. Then open the lid and sauté them for 1-2 minutes or till the moisture disappears.
7. Veggies are slightly cooked. Cool completely and they are ready to use.
8. Take a grinder/blender jar and add blanched spinach and prepared veggies to it.
9. Grind to coarse paste.
10. Transfer this coarse paste to a large mixing bowl and then add 3 boiled & mashed potatoes. Further add 1/2 cup crumbled paneer to it.
11. Then add 3 tbsp finely chopped coriander leaves, ½ tsp Ground Black Pepper, ½ tsp Coriander Powder, ¼ tsp Garam Masala and ½ tsp Dried Mango Powder/ Amchur to it. Alternatively, Red chili powder can be used in place of black pepper.
12. Add 1 tbsp corn flour and 2 tbsp bread crumbs to it. These two ingredients helps in absorbing moisture and binds well.
13. Mix well making sure all the ingredients are combined well. It looks like soft dough.
14. Grease hands with oil and make a small ball. Then give this ball a depression in the center and place chopped cashew nuts. Greasing with oil, prevents dough from sticking to hands.
15. Then give it a shape of patties or tikki by flattening it.
16. Cover the patties with bread crumbs to make hara bhara kabab more crispy.
17. Place and press half cashew at the centre. Likewise. prepare all the patties.
18. Now, heat 2-3 tbsp oil in tawa/griddle for pan fry the Kabab and place all the patties one by one. Alternatively, you can deep fry the Kabab, but shallow fry requires less oil and is a healthier option.
19. Flip them 2-3 times to roast kabab from both sides properly. Roast them till they turn golden brown. Flip them very carefully.
20. Hara Bhara Kabab is ready to serve. Enjoy it hot with Tamarind chutney or Tomato Ketchup/Sauce.
