Green Masala Poha is an easy, delicious and healthy breakfast recipe made with flattened rice, fresh green coriander leaves, mint leaves, green chili, onion and green vegetables like capsicum, peas etc. It can also be served as evening snack, or packed in lunch box. This is very simple, attractive and nutritious recipe. Here is the recipe with some tips and step by step instructions and pictures.
1. Firstly, take 1 cup fresh coriander leaves and 1/4 cup fresh mint leaves in a grinder jar.
2. Then add 1 green chili and 1/2 inch ginger to it.
3. Next add 1 tsp sugar, 1 tbsp lemon juice, 1 tsp cumin seeds/ jeera, salt to taste and 1/4 cup grated fresh coconut to it.
4. Add 2 tbsp water and grind to smooth puree.
5. For Hara Bhara Poha, heat 2 tbsp oil in a large pan/ kadai and roast 5-6 cashew nuts (halved) and keep them aside.
6. In the same oil add 1 tsp mustard seeds, 5-6 curry leaves and 1 handful peanuts to it. Roast the peanuts on low flame till they become crunchy.
7. Now, add 1 medium- sized chopped onion and 1/2 chopped capsicum/ green bell pepper to it.
8. Sauté for around 5 minutes.
9. Then add prepared Green Masala puree to it.
10. Sauté for 2 minutes.
11. Then add 1/4 cup green peas, and sauté for 2 more minutes. I have added frozen peas, if you are using fresh peas then first boil them then add.
12. Place 2 cups of poha in a sieve and add water into it to wash. To make perfect Poha don't soak it in the water, just rinse it properly.
13. Add rinsed poha to the pan.
14. Mix them gently on low flame, make sure poha is mixed well with green masala. Add more salt as per taste. Remember you have added salt in the green masala before too.
15. Cover and cook for a minute.
16. Healthy and delicious Green Masala Poha is ready to serve.
17. Garnish the Green Poha/ Hariyali Poha with the roasted cashew nuts. Squeeze lemon/ lime as per your taste. Enjoy!
