Gajar Halwa is an authentic Indian dessert. This recipe shares the traditional way of making delicious gajar ka halwa without adding any mawa, milk powder or condensed milk. It is typically prepared with only three main ingredients- grated carrot, milk and sugar. This is very healthy recipe as carrots are good source of vitamins, fiber, potassium, and antioxidants. Ingredients for Gajar Halwa:
 1 kg Carrot
 1.50 l Full cream Milk
 ¾ cup Sugar
 1 tbsp Clarified Butter/ Desi Ghee
 2 Green Cardamom
 15 AlmondsChopped
 15 Cashew nutsChopped
 20 Raisins/ Kishmish
Directions for preparing Carrot Halwa with step by step photos:

1. Firstly, take 1kg carrot, peel and grate them. Add 1 tablespoon of clarified butter/ghee and 2 cardamom pods in a wok and then add grated carrot to it.

2. Cover and cook on low-medium flame for 10 mins. Stir occasionally, make sure that carrot doesn't burn from the bottom.

3. Add chopped almonds and cashew nuts to it and mix well.

4. Then add 1.5 litres milk to it and give a good stir.

5. Bring a boil and cover it. Cook on low-medium flame. Stir occasionally.

6. Continue to boil until the carrots are cooked well and milk reduces.

7. Then add 3/4 cup of sugar and 15-20 raisins to it.

8. Mix well and cook until the sugar dissolves.

9. Cook until the whole halwa mixture becomes dry. The milk should evaporate completely and you will see fine milk solids in the carrot halwa. Turn off the flame and Gajar ka Halwa is ready.
