Fruit Custard is a super easy and very popular Indian dessert, made with custard powder, milk and mixed variety of fruits. In this recipe readymade Vanilla custard powder is used instead of corn flour and eggs. This is eggless creamy fruit custard recipe, in which custard sauce is prepared with milk, sugar and readymade Vanilla custard powder. Ingredients for Fruit Custard:
 2 cups or 1/2 liter Milk
 2 tbsp Custard Powder
 3 tbsp Cold Milk
 ¼ cup SugarFor little less sweetness add 3 tablespoons of sugar.
 ¼ tsp Cardamom PowderOptional
 2 cups Chopped fruits of your choiceApple, Mango, Kiwi, Green Grapes, Red Grapes, Strawberries & Pomegranate
 Few Almonds (Soaked & Chopped)Optional

1. Firstly, take 2 cups of milk in a thick-bottomed pan.

2. Bring the milk to a boil while stirring occasionally.

3. Meanwhile, take 2 tbsp of vanilla custard powder in a bowl and add 3tbsp cold milk to it. Any flavour of custard powder can be used. Make sure do not add hot milk as custard powder will curdle.

4. Stir very well to make a smooth paste without any lumps.

5. Keep the flame on a low and then add the custard paste with one hand and stir the milk continuously with the other hand.

6. Then add sugar and cardamom powder, stir very well so that the sugar dissolves.

7. Keep on stirring often while the custard is cooking, so that lumps are not formed. Cook for about 5 to 6 minutes on a low flame.

8. The milk changes colour to dark yellow and it thickens slightly. Adjust the consistency by cooking for long time. Do not over cook as it turns thick after cooling.

9. Transfer to a bowl and cool completely. Make sure to cover or stir occasionally, else a thick layer will be formed over custard milk.

10. Once the prepared custard milk has cooled completely, add chopped fruits of your choice. I have added apple, mango, green grapes, red grapes, strawberries, kiwi and pomegranate. Mix gently, cover and chill for 2 hours or more.

11. Once the fruit custard has chilled, it turns more thick and creamy.
