Tutti Frutti Cake is a yummy tea-time colorful cake. This cake is very popular in India. Everyone either adults or kids just love the soft, moist, spongy and nutty cake. This cake is perfect for snack time for school or office. This recipe closely resembles the taste of Britannia Eggless Cakes. This recipe is perfect if you are looking for eggless soft and spongy cake. You just need to follow step by step detailed instructions given with the pictures.
Ingredients Preview
Firstly, in a large mixing bowl take curd.
Add sugar in the mixing bowl.
Then add baking powder, baking soda and salt.
Mix them well with help of whisk. Some bubbles will form and keep it aside for 5 mins.
Take tutti frutti in a separate small bowl and add 1 tsp maida/all purpose flour in it.
Mix the maida with tutti frutti. This step is very important as it prevents the tutti frutti to sink at the bottom when you add it in the cake mix.
Meanwhile grease the pan with some non-sticky oil followed by butter paper.
Add Vanilla essence and mixed fruit essence in the mixture we have previously made.
Add oil/ butter to that mixture.
Further sieve maida/ all purpose flour in the mixture.
Mix well using cut and fold method. Don't over mix the batter.
Add tutti frutti and give it a good mix.
Now the batter is ready. Transfer the cake batter into the cake mould or bread mould. Level up the batter and pat the tray twice to remove the air bubbles incorporated into the batter.
Place the cake tray into preheated oven for 10 mins at 180 degree Celsius or 350 degree Fahrenheit. Bake the cake at same temperature for 38-40 minutes.
Allow the cake to cool completely.
Then cut it into thick slices.
Finally, the tutti frutti cake is ready. Enjoy the cake at tea-time or store it in the airtight container for a week. Keep it refrigerated during summer days.
