Dalia Pulao is a healthy and tasty breakfast recipe, prepared with broken wheat/ cracked wheat and lots of vegetables. Broken wheat pulao is very nutritious and an easily digestible meal for kids, elders or people recovering from illness. Here is the recipe with some tips and step by step instructions and pictures.
1. In a large pan/kadai, heat 1 tbsp ghee/ clarified butter.
2. Then add 1/2 cup broken wheat/ dalia to it. Mix it with ghee and begin to roasting the dalia on low flame.
3. Stir continuously while roasting. Roast for 3 to 4 minutes on a low to medium-low flame. The dalia will become aromatic and the color will change.
4. Then add 1.5 cups of water to it. Stir and mix very well.
5. Cover and cook on low flame for 10-12 minutes or until the dalia is cooked properly.
6. Meanwhile, heat 1/2 tablespoon ghee/clarified butter in a pan. Keep flame to medium-low and add 1 tsp cumin seeds in the hot ghee and let them crackle. Then add 1 finely chopped green chili.
7. Add 1 chopped onion to it and sauté till the onion becomes translucent.
8. Now add 1 finely chopped carrot, 1/2 finely chopped capsicum/ green bell pepper and 1/2 cup chopped French beans to it.
9. Further add 1/2 cup broccoli and 1/4 cup green peas to it. Mix them well.
10. Then add salt to taste, 1/2 tsp ground black pepper and 1/2 tsp coriander powder to it. Mix well.
11. Cover the frying pan and fry for 4-5 minutes on a low flame. Veggies are ready.
12. After 12 minutes dalia has been cooked properly and absorbed all water.
13. Now add the prepared veggies to it.
14. Also add 2 tbsp finely chopped coriander leaves.
15. Mix vegetables with cooked broken wheat very well.
16. Finally, squeeze 1 lime and mix it well.
17. Dalia Pulao is ready to serve. Enjoy fresh and hot Broken Wheat Pulao, along with chutney or curd.
