Dahi Phulki is a savory dish made of gram flour dumplings dipped in a spicy yogurt dip. Dahi Phulki is little different from Dahi Vada, with slight change on ingredients but it tastes as good as Dahi Bhalle. It is very light & refreshing. It is prepared very easily as this recipe doesn't involve soaking & grinding of Dal as we do for Dahi Vada. Today, I am going to share two ways of serving this- One is Dahi Phulki with tempering & another one is Dahi Phulki Chaat. It tastes wonderful both ways. Dahi Phulki with tempering tastes amazing with Pulao or Biryani. Here is the recipe with step by step instructions, Photos & tips.

Dahi Phulki Final

Ingredients for making Phulki:
 ½ cup Gram Flour/ Besan
 ¼ tsp Cumin Seeds/Jeera
 ½ tsp Red Chili Powder
 ½ tsp Salt
 1 pinch Asafeotida/ Heeng
 2 pinches Baking Soda
 1 Onion Finely Chopped
 1 Green ChiliFinely Chopped
 2 tbsp Fresh Coriander leavesFinely chopped
 1 tsp Ginger Pasteor 1/2 inch grated ginger
 ¼ cup WaterQuantity of water depends on the quality of besan.
 Oil for deep frying
Ingredients for Dahi:
 1 cup Curd/ Plain yogurt
 1 cup Water
 1.50 tsp Sugar
 ½ tsp Black salt
 ½ tsp Roasted cumin powder
 ¼ tsp Grounded Black Pepper
 Salt to taste
Ingredients for Tempering:
 1 tsp Oil
 ½ tsp Cumin Seeds/ Jeera
 3 Dry Red ChiliesBroken
Ingredients for topping:
 ½ OnionFinely Chopped
 ½ TomatoFinely Chopped
 6 Dry Mint leavesor 1/2 tsp mint powder
 1 tbsp Fresh Coriander leavesFinely chopped
 2 tsp Green Chutney1 tsp for 1 serving
 2 tsp Tamarind Chutney1 tsp for 1 serving
 Few chips
 2 tbsp Sev

2. Take 1/2 cup Gram flour/ Besan in a mixing bowl and add 1/4 tsp Jeera, 1/2 tsp Red Chili Powder and 1/2 tsp salt to it.

3. Add 1 chopped onion, 1 chopped green chili, 2 tbsp coriander leaves and 1 tsp ginger paste to it.

4. Add a pinch of Asafeotida and 2 pinches Baking Soda to it.

5. Mix all the ingredients well and then gradually add 1/4 cup water.

6. Mix it well and beat the mixture in one direction for 5 minutes.

7. To check, drop the drop of the mixture into the water, if the drop floats in the water, your mixture is ​​ready otherwise beat it for more 2 mins.

8. Once the batter is ready, keep it aside to set for 5 mins.

9. Meanwhile, prepare its Dahi/curd. Take 1 cup curd/plain yogurt in a large mixing bowl and whisk it.

11. Add 1.5 tsp sugar, 1/2 tsp black salt, 1/2 tsp roasted cumin powder, salt to taste and 1/4 tsp black pepper to it.

13. Now, let's prepare Phulki, drop very small balls one by one to medium hot oil.

14. Keep the flame on low to medium and stir occasionally.

15. Fry the phulki till they turn golden brown and directly transfer to the prepared curd.

16. Mix them in the curd. Cover it and keep it aside to set for at-least 45 mins.

Directions for tempering & toppings:

17. For its tempering, heat 1 tsp oil in a pan and add 1/2 tsp cumin seeds/jeera and 2-3 dry red chilies.

18. Take one bowl of dahi phulki aside to prepare it's chaat. Pour the tempering over the remaining Dahi phulki.

19. Sprinkle a pinch of red chili powder, roasted cumin powder, finely chopped onion, finely chopped tomatoes, finely chopped fresh coriander leaves and crush few dry leaves of mint. You can use mint powder also.

20. Garnish it with onion slices. Dahi Phulki is ready to serve.

21. You can also enjoy Dahi Phulki as a chaat. Take prepared dahi phulki in a serving bowl.

22. Then add 5-6 fried phulki's and crush few mint leaves and top it with finely chopped coriander leaves.

23. Then top it with finely chopped onion and tomato.

24. Top it with 1 tsp of green chutney and 1 tsp of tamarind chutney.
