Cucumber Raita is simple and quick recipe served with Prantha, Pulao, Briyani or even with any dry curries. Basically it is a cooling dip made up with curd/yogurt and grated cucumber. Ingredients Preview.
Take a mixing bowl and add curd to it. Whisk the curd to make a smooth silky consistency of curd. You can use electronic mixer/blender or hand whisk to whisk it.
Add the grated cucumber to it.
Add all the spices - salt, black salt, grounded black pepper, roasted cumin powder and mint powder to it. Add chopped coriander leaves to it.
Mix all the ingredients well.
