Boondi Papad Curry recipe is very simple and quick to prepare. It can be prepared within few minutes. For this recipe any boondi works well whether it is homemade or boondi which is available in the market. Even for Papad there is no particular choice, you can use any which you likes or easily available. It tastes great with both chapati/parantha and rice. It is very light and easy to digest curry. Here is the recipe with step by step instructions, pictures and tips.
1. Ingredients Preview.
2. Heat 1 tbsp oil in a pan/Kadai and then add 1/2 tsp cumin seeds and 1 bay leaf to it. Let the cumin seeds splutter.
3. Add 1 finely chopped onion , 1 green chili and 1 tsp ginger paste to it.
4. Sauté them till the onion turns golden brown.
5. Add 3 grated tomatoes and salt to taste to it. You can add finely chopped or tomato puree also.
6. Add 1/2 tsp turmeric powder, 1/2 tsp red chili powder, 1 tsp coriander powder and 1/4 tsp dried mango powder(Amchur) to it.
7. Roast them till it starts separating oil and tomatoes become mashy.
8. Then add 1.5 cups water to it. Boil the gravy for 4-5 mins.
9. Finally, add 1 crushed papad and 1 cup boondi to it. Mix gently.
10. Boondi Papad Curry is ready. Transfer it to serving bowl.
11. Garnish Boondi Papad Sabzi with finely chopped fresh coriander leaves. Enjoy it with Chapati/ Parantha or Rice.
