Bharwan karela is a popular North Indian recipe. This is a spicy and healthy recipe and can also be consumed for a week. The stuffed karela is also served as a side dish during lunch or dinner. Serve it with poori, parantha, chapati or naan. You can take it along with you during your journey. Here is the recipe with step by step instructions and pictures.
Ingredients preview. Wash the bitter gourd and scrape its skin. Now cut the karelas from the center leaving the bottom part. Remove the hard seeds with the help of knife.
After that take the bitter gourds in a deep plate/ bowl and then sprinkle 1/2 tsp of salt over them and rub them.
Leave the bitter gourds for 20 minutes.
Now, take the masala of punjabi Mango pickle in a small bowl. Add salt and turmeric powder to it.
Add coriander powder and red chili powder to it.
Add roasted cumin powder and garam masala to it.
Mix them well. Achari stuffing is ready.
Wash the bitter gourds and squeeze all the water from it.
Stuff the prepared stuffing into it.
Stuff all the bitter gourds with the masala equally. Press the masala well into the karela so it settles down.
Heat 2tbsp of oil and add bitter gourd one by one.
Cook slightly then cover the pan and cook the karela on a medium flame for 6-7 minutes. Open the lid, flip the karela, cover the pan again and cook it for another 5-6 minute.
Open the lid and flip the side of the karela from where it is not cooked. Keep on turning the sides till the bitter gourd is cooked from all the sides and corners till they are brown.
