Beetroot Raita is a healthy and beautiful coloured raita recipe made with grated beetroot. This is much similar to South Indian beetroot Pachadi. This recipe goes well as side dish with any rice recipes like hot steamed rice, pulao and biryani etc. You can also serve it with Paranthas. Here is the recipe with step by step pictures.

Ingredients for Beetroot Raita Recipe:
 1 Beetroot (small sized)Grated
 1 cup Curd / yogurt
  tsp Mustard seeds
 4 Curry leaves2 whole & 2 chopped
 2 Green Chili
 ½ tsp Kashmiri Red chili powder
 ¼ tsp Dried Mango powder
 1 tsp OilAny oil of your choice.
 Salt to taste
 2 tbsp Water

Heat a pan and add 1 tsp of oil to it then add mustard seeds to it.

Add curry leaves (2 whole and 2 chopped leaves) to it.

Add green chili to it. Saute them.

Add grated beetroot to it.

Add 2 tbsp of water to it and mix them well.

Cover and cook it for 5-7 minutes.

Add salt and red chili powder to it.

Whisk the curd to make a smooth silky consistency of curd.
