Bajra Gud Roti is a traditional recipe for winter in North India as a tea time snack, prepared with very few ingredients. Millet flour and jaggery two are the main ingredients and fennel seeds and green cardamom powder are just added to enhance the flavours. It is a healthy delicious snack recipe that you can enjoy at any time during day. Here is the recipe with step by step instructions and pictures with some tips.
1. Firstly, take 1/4 cup Jaggery/Gur in a bowl and then add 1/4 cup hot water to it.
2. Dissolve the jaggery well. Don't prepare sugar syrup/chashni.
3. Sieve it and keep it aside.
4. Add 1 cup of Millet flour/ Bajra Atta in a large bowl then add 1/2 tsp green cardamom powder and 1 tsp fennel seeds/ saunf to it.
5. Add 1 heaped full tsp of Desi Ghee/ clarified butter and melted jaggery to it. Mix it well to form a dough..
6. Knead it 5-6 mins to make a smooth dough. Take a ball sized dough.
7. Now, set plastic sheet or polythene bag over the rolling board. Place the dough ball and tap gently to a thin thickness.
8. Pat the dough till you get a round roti.
9. Easily peel the roti from plastic sheet to your hand, just take one corner of plastic sheet up and flip the roti gently on your hand. Now, spread some ghee/oil on a hot tawa. Gently place the bajra roti on the tawa. I have used ghee.
10. Apply ghee/oil on the top side of the roti also. When one side is a little browned, flip the roti with the help of a spatula/ palta and gently press the roti for even cooking.
11. When the other side gets browned, flip again. Flip for a couple of times till the millet jaggery roti is well browned and cooked from all sides.
12. Prepare all roti's likewise and cool completely. Bajra Gud ki Roti is ready to serve. Enjoy it any time as a healthy snack.
